  • 1 tsp garlic powder Fresh garlic can elevate the flavor further.
  • to taste salt and pepper Don’t forget to season!
  • 2 pieces green onions Chopped, for a pop of color and freshness.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Clean the russet potatoes thoroughly. Pat them dry and poke several holes with a fork to allow steam to escape.
  • Place the potatoes directly on the oven rack and bake for 40-50 minutes or until fork-tender.

Making the Filling

  • Once the potatoes are cool enough to handle, slice them in half lengthwise, scoop out the flesh into a bowl, and mash with sour cream, garlic powder, salt, and pepper.
  • Mix in the shredded cheddar cheese and chopped green onions until fully combined.

Baking

  • Spoon the cheesy potato mixture back into each potato half, creating a little 'volcano' shape.
  • Place the filled potato halves on a baking sheet and return to the oven for an additional 10-15 minutes, or until the tops are golden and bubbly.

Notes

Feel free to get creative! Add cooked bacon bits or broccoli for a hearty twist. Experiment with different cheeses or top with salsa or fresh herbs for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
