Preparation

  • In a large pot over medium heat, melt a tablespoon of butter. Add the diced onion and cook until soft and translucent, about 3-4 minutes.

Cooking

  • Add the diced potatoes to the pot, followed by the broth. Bring the mixture to a simmer.
  • Reduce the heat and let the soup cook until the potatoes are fork-tender, about 15 minutes.
  • For a creamier texture, use an immersion blender to puree part of the soup. If you enjoy a chunkier soup, skip this step.
  • Add the shredded cheddar cheese and heavy cream, stirring until the cheese melts and the soup is creamy.
