Cheesy Pepperoni Pizza Quesadillas

Ingredients
  

Main Ingredients

  • 4 large large flour tortillas Soft and pliable, perfect for folding and flipping.
  • 2 cups shredded mozzarella cheese Feel free to mix in provolone or cheddar for extra flavor.
  • 1 cup sliced pepperoni Customize with turkey pepperoni or diced ham.
  • 1/2 cup pizza sauce Use store-bought or homemade with crushed tomatoes and herbs.
  • 1 tablespoon olive oil For a golden finish; can substitute with butter.

Optional Toppings

  • Chopped fresh basil For a fresh touch.
  • Sliced jalapeƱos For those who enjoy a little kick.
  • Crushed red pepper For additional heat.

Preparation

  • Gather all your ingredients and have them ready. Let the kids help by sprinkling cheese and layering pepperoni.

Make the Filling

  • In a medium bowl, combine the shredded mozzarella and half of the pepperoni slices. Mix thoroughly.

Assemble the Quesadillas

  • Heat a non-stick skillet over medium heat and add a splash of olive oil. Place one tortilla in the skillet.
  • Spread about 1/4 of the cheese and pepperoni mixture evenly over half of the tortilla.

Add the Sauce

  • Spoon a couple of tablespoons of pizza sauce over the cheese and pepperoni. Fold the tortilla in half to cover the filling.

Cook Until Golden

  • Cook for about 3-4 minutes on one side until golden brown and cheese begins to melt, then flip and cook for another 3-4 minutes.

Repeat

  • Remove the cooked quesadilla and keep it warm in a clean kitchen towel while you repeat with the remaining tortillas and filling.

Slice and Serve

  • Once all are cooked, slice each quesadilla into wedges and serve warm with extra pizza sauce and your favorite toppings.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. You can freeze cooked quesadillas for up to a month, separated by parchment paper.
