Cooking Instructions

  • Start by boiling a large pot of salted water. Add the penne and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add a drizzle of olive oil. Once hot, toss in the diced onions and bell peppers. Sauté until they're tender—about 3-4 minutes.
  • Add the ground beef (or sausage) to the skillet. Break it apart with a spatula, and cook until browned, about 5-7 minutes. Season with salt and pepper.
  • Stir in the minced garlic, cooking for another minute until fragrant.
  • Pour in the crushed tomatoes and sprinkle the Italian seasoning. Stir everything together, letting it simmer for 5 minutes.
  • Gently fold in the cooked penne pasta, followed by half of the shredded mozzarella cheese.
  • Transfer the mixture to a baking dish, sprinkle the remaining cheese on top, and pop it in a preheated oven at 350°F (175°C) for about 10-15 minutes.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish also freezes beautifully!
