Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel the potatoes and slice them thinly, about ¼ inch thick.
  • In a large skillet over medium heat, add the olive oil. Once hot, sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
  • Add the ground beef to the skillet. Season with salt, pepper, and paprika. Cook until the beef is browned, about 6-8 minutes.
  • Stir in the cream of mushroom soup, mixing it thoroughly until the beef is well-coated.

Assembly and Baking

  • In a greased 9x13-inch baking dish, layer half of the sliced potatoes.
  • Spread a layer of the beef mixture on top, then sprinkle with half of the shredded cheese.
  • Repeat this layering process with the remaining potatoes, beef mixture, and top with the remaining cheese.
  • Cover the casserole with aluminum foil to prevent it from drying out and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let the casserole sit for about 5-10 minutes before serving.

Notes

For healthier options, consider using ground turkey or chicken, or replace cream of mushroom soup with Greek yogurt. For a vegetarian version, substitute beef with lentils or vegetables.
