Preparation

  • In a large skillet, melt the butter over medium heat.
  • Stir in the corn kernels and cook for about 4-5 minutes until they soften and start to caramelize.
  • Add the cream cheese, stirring until it melts and combines with the corn.
  • Gradually fold in the sharp cheddar and sour cream until melted.
  • Sprinkle in the garlic powder, salt, and pepper, mixing well.
  • Remove from heat and garnish with chopped chives or parsley.
  • Serve immediately while hot.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to four days. To reheat, warm in the microwave for 1-2 minutes, adding a splash of milk to maintain creaminess.
