  • 1 cup sour cream Greek yogurt can be an excellent substitute.
  • 1 cup shredded cheddar cheese Sharp cheddar adds depth; feel free to mix in mozzarella.
  • 1 teaspoon garlic powder Fresh garlic cloves are a delightful alternative.
  • 1 teaspoon onion powder Chopped onions can also be included.
  • Salt and pepper to taste Essential for balancing flavors.
  • Optional toppings: Fresh herbs like parsley or chives for garnish.

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, garlic powder, onion powder, and salt and pepper.
  • Fold in ¾ cup of the shredded cheddar cheese.
  • Grease a 9x13-inch baking dish and pour the mixture into it, spreading it evenly.
  • Sprinkle the remaining cheese on top.
  • Place the dish in the preheated oven and bake for 25-30 minutes.
  • Once the cheese is golden and bubbly, take it out and allow it to rest for a few minutes before serving.

Notes

Consider healthy swaps like brown rice or quinoa. You can add vegetables or spice it up with cayenne pepper.
