  • 1 cup chicken broth Use low-sodium to control salt levels.
  • 2 teaspoons Cajun seasoning Essential for that rich, flavorful backbone.

Preparation

  • In a large pot over medium heat, add the smoked sausage. Cook until browned and crispy, about 5-7 minutes.
  • Add the chopped onion and minced garlic. Continue to sauté until the onion is translucent and the garlic fragrant, about 3-4 minutes.
  • Add the can of diced tomatoes (with juices) to the pot. Stir well, allowing the flavors to meld together.
  • Sprinkle in the Cajun seasoning, mixing thoroughly.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Once the broth simmers, add the fresh green beans.
  • Cover the pot and let it simmer for about 10-15 minutes or until the green beans are tender yet still vibrant.
  • Taste and adjust salt and pepper, if necessary. Serve warm and enjoy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a saucepan over low heat, adding a splash of broth if needed.
