Ingredients
  

Main Ingredients

  • 6 cups Vegetable broth Use low-sodium for a healthier option.
  • 2 medium Carrots, sliced Adds sweetness and color.
  • 2 stalks Celery, finely chopped For crunch.
  • 1 medium Onion, diced Lends a fragrant base.
  • 2 cloves Garlic, minced Essential for flavor.
  • 1 can Canned tomatoes Adds acidity and color.
  • 1 can Beans (kidney or cannellini) For protein.
  • 2 cups Mixed vegetables Frozen works well.

Seasonings

  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Dried thyme
  • 2 leaves Bay leaf

Instructions
 

Preparation

  • In a large pot, heat a splash of olive oil over medium heat.
  • Add the diced onion and sauté for about 3-4 minutes until soft and translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Toss in the carrots and celery, cooking for another 5 minutes, stirring occasionally.

Cooking

  • Add the canned tomatoes along with their juice, the vegetable broth, and your chosen seasonings. Bring to a simmer.
  • Once bubbling, add the beans and mixed vegetables. Let it cook for an additional 10 minutes.
  • Taste and adjust seasoning as needed. Serve hot and enjoy every comforting spoonful!

Notes

This soup stores beautifully in the fridge for up to four days and can be frozen. Add fresh herbs at the end for a flavor boost.
