  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour Can be substituted with gluten-free flour
  • 1/4 cup cornstarch Can be replaced with almond flour for a nutty twist
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup vegetable oil Olive oil can be used for a healthier option
  • 1/2 cup Buffalo sauce Choose your favorite brand or make it homemade
  • 1/4 cup nutritional yeast Can be omitted if preferred

Instructions
 

Preparation

  • Preheat your oven to 450°F (232°C).
  • Cut the cauliflower into bite-sized wings.
  • In a large bowl, combine flour, cornstarch, garlic powder, onion powder, and a pinch of salt. Stir until combined.
  • Add the cauliflower florets to the bowl and toss until evenly coated.

Baking

  • Spread the coated florets in a single layer on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping halfway through until golden and crispy.
  • Take the cauliflower out of the oven and add it to a bowl with Buffalo sauce. Toss until each piece is well coated.
  • Return the sauced florets to the baking sheet and bake for an additional 5–10 minutes, allowing the sauce to set and become a little sticky.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for crispiness. Uncooked coated florets can be frozen and baked from frozen, adding extra time.
