Instructions
 

Preparation

  • Trim the ends off the Brussels sprouts and slice them thinly. A mandoline works wonders here, but a sharp knife will do just fine.
  • Core the apple and chop it into small, bite-sized pieces.

Mixing

  • In a large bowl, combine the sliced Brussels sprouts, diced apple, red onions, dried cranberries, and walnuts.

Dressing

  • In a small bowl, whisk together the olive oil, apple cider vinegar, and honey (or maple syrup).

Serving

  • Drizzle the dressing over the salad and toss gently to coat all the ingredients. Sprinkle the feta cheese on top if using, and serve immediately.
