Preparation

  • Preheat the oven broiler to high and position the rack about 6 inches from the heat source.
  • Using kitchen scissors, cut down the center of the lobster shell, stopping just before the tail fin. Gently pull apart the shell to expose the meat.
  • In a small bowl, melt the butter and mix in the minced garlic, lemon juice, paprika, salt, and pepper.

Cooking

  • Place the lobster tails on a lined baking sheet (meat side up) and generously brush them with the garlic butter mixture.
  • Place them under the broiler and cook for 10-15 minutes or until the lobster meat is opaque and slightly browned.

Serving

  • Drizzle with the remaining garlic butter, add a squeeze more lemon, and serve hot.

Notes

For a festive touch, sprinkle fresh chopped parsley or chives on top. For a spicy kick, add red pepper flakes to the garlic butter mixture. Pair with garlic mashed potatoes or a crisp green salad.
