Preparation

  • Start by finely shredding the green and red cabbage into thin pieces.
  • Using a box grater or food processor, grate the carrots until they’re fine.

Mixing the Dressing

  • In a large bowl, combine mayo, Greek yogurt, apple cider vinegar, honey, and Dijon mustard. Whisk until smooth and creamy.

Combining Ingredients

  • In the same bowl, add the shredded cabbage, carrots, green onions, and parsley. Fold the veggies into the dressing until every piece is coated.
  • Sprinkle with salt and pepper and toss gently.

Chilling

  • Let your coleslaw sit in the refrigerator for about 30 minutes for the best flavor.
  • Before serving, give it a quick toss.

Notes
