Preparation

  • Tear romaine and combine with mixed baby greens in a large bowl. Pat them dry so the dressing clings beautifully.
  • In a small skillet over medium heat, toast almonds or walnuts for 3–4 minutes until fragrant and golden, shaking the pan so they brown evenly.
  • Whisk together lemon juice, lemon zest, minced garlic, Dijon mustard, honey, salt, and pepper. Slowly stream in olive oil while whisking to emulsify into a silky dressing.
  • Add sliced cucumber, halved cherry tomatoes, avocado, and chives to the greens. Drizzle about two-thirds of the dressing over the salad and toss gently—avoid mashing the avocado.
  • If using grilled chicken or shrimp, slice and arrange on top. If you prefer roasted chickpeas, sprinkle them now for a delightful crunch.
  • Scatter toasted nuts and shaved cheese over the top. Drizzle remaining dressing sparingly for visual appeal. Serve immediately.

Notes

Use room-temperature lemon juice for better emulsification. Store dressing separately for up to 5 days in the fridge. Add delicate herbs at the end for freshness.
