Preparation

  • In a large pot, brown the ground beef over medium heat until fully cooked. The rich scent will start to fill your kitchen.
  • Drain any excess fat, and add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  • Stir in the minced garlic and dried thyme. Sauté for another minute until fragrant.
  • Pour in the beef broth and bring to a gentle simmer. Add the uncooked rice and season with salt and pepper.
  • Cover and let it simmer for about 15 to 20 minutes, or until the rice is tender, stirring occasionally.
  • Taste and adjust seasoning if necessary. If you have some fresh parsley, sprinkle it on top just before serving.

Notes

This soup can be stored in the fridge for up to 3 days or frozen for up to 3 months. Brown the beef well for enhanced flavor, and consider adding Worcestershire sauce for richness.
