Preparation

  • Preheat your oven to 350°F (175°C), and prepare a muffin tin with paper liners or a light coat of cooking spray.
  • Mash the ripe bananas in a large bowl with a fork until smooth.
  • Stir in the melted butter to the mashed bananas until well-combined, followed by the sugar, egg, and vanilla extract.
  • Sprinkle the baking soda and salt over the mixture, ensuring they are evenly distributed.
  • Gently fold in the flour just until combined.
  • Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Baking

  • Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean.
  • Let them cool in the tin for a few minutes before moving them to a wire rack.

Notes
