Instructions
 

Preparation

  • In a large saucepan, melt the butter over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute.

Cooking

  • Sprinkle the flour over the mixture and stir. Cook for about 2 minutes until golden brown.
  • Slowly pour in the chicken broth while stirring constantly to avoid lumps. Let the mixture simmer for about 5 minutes.
  • Gradually whisk in the beer.
  • Lower the heat and stir in the cheddar cheese and milk (or heavy cream).
  • Allow the soup to simmer for an additional 5 minutes, stirring occasionally until the cheese is completely melted.
  • Taste and adjust seasoning as necessary.

Notes

Store leftovers in an airtight container in the fridge for up to three days. You can freeze the base soup for up to three months.
