  • 1 lb beef tips (sirloin or tenderloin can be substituted) Choose leaner cuts for a healthier option.
  • 1 cup rice (white, brown, or jasmine) Brown rice offers more fiber.
  • 2 cups beef broth Use at room temperature for better cooking.
  • 1 medium onion (diced) Yellow or sweet onions enhance sweetness.
  • 2 cloves garlic (minced)
  • 1 cup mushrooms (sliced) Cremini or button mushrooms enhance earthiness.
  • 2 tbsp soy sauce Use tamari for a gluten-free option.
  • 2 tbsp olive oil Vegetable oil can be used as a substitute.
  • Salt and pepper To taste
  • Fresh herbs (optional) Like parsley or thyme for garnish.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the beef tips generously with salt and pepper.
  • Add the beef tips to the skillet and sear for about 3-4 minutes until browned on all sides.
  • Remove beef and set aside. In the same skillet, add diced onion and minced garlic, sauté for 2-3 minutes until translucent.

Cooking

  • Add sliced mushrooms to the skillet and continue cooking for another 5 minutes.
  • Return the beef tips to the skillet, pour in beef broth and soy sauce. Bring to a boil and then reduce heat to low.
  • Cover and let simmer for 45 minutes.
  • Prepare the rice according to package instructions while the beef tips are simmering.
  • Once the beef tips are tender, serve over rice.
  • Garnish with fresh herbs.

Notes

To keep beef tender, avoid overcooking. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
