  • Cook the noodles: Boil salted water and cook your egg noodles according to package instructions. Drain and set aside.
  • Sauté the beef: In a large skillet, heat olive oil over medium-high heat. Add the sliced beef, season with salt and pepper, and cook until browned, about 4 minutes.
  • Add the aromatics: Stir in the onions and garlic, cooking until the onions are translucent, about 2-3 minutes.
  • Mushrooms join the party: Add the mushrooms and sauté until tender and slightly golden.
  • Make the sauce: Sprinkle in the flour and stir for about a minute. Gradually pour in the beef broth, continuing to stir until slightly thickened.
  • Creamy goodness: Reduce heat to low and stir in the sour cream until well combined.
  • Mix it up: Add the noodles to the sauce and gently stir until fully coated.
  • Serve warm: Garnish with freshly chopped parsley and serve immediately.

Notes

For variations, try using Greek yogurt instead of sour cream, or add different types of mushrooms for added richness. Serve with a good red wine or sparkling water.
