  • 1 lb Ground Beef Can substitute with ground turkey for a healthier option.
  • 8 oz Egg Noodles Cook according to package instructions.
  • 2 cans Cream of Mushroom Soup Use low-fat or homemade for a healthier version.
  • 1 cup Shredded Cheese Cheddar or mozzarella. Nutritional yeast can be a dairy-free substitute.
  • 1 medium Onion Diced.
  • 2 cloves Garlic Minced.
  • 3 tbsp Soy Sauce Adds umami flavor.
  • 2 cups Frozen Vegetables Mix of peas, carrots, or corn.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cook the egg noodles in boiling salted water according to package instructions until al dente. Drain and set aside.
  • In a large skillet, brown the ground beef over medium heat, breaking it up with a wooden spoon until fully cooked. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet and sauté for about 3-4 minutes, until soft and fragrant.
  • Stir in the cream of mushroom soup and soy sauce, mixing well.
  • Gently fold in the cooked noodles and frozen vegetables until everything is well-coated.
  • Pour the mixture into a greased baking dish and top with shredded cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

Notes

For best results, store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze unbaked casserole for up to 3 months.
