Main Ingredients

  • 1 lb ground beef Feel free to swap for turkey or plant-based ground for a healthier option.
  • 1 can (15 oz) kidney beans, drained Black beans also work great.
  • 1 can (15 oz) diced tomatoes, with juices Herbed varieties can add a lovely twist.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder Add more if you’re feeling spicy.
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika For a warm, smoky flavor.
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large pot or Dutch oven over medium heat, add a splash of oil. Once hot, toss in the chopped onion and garlic. Sauté for about 3-4 minutes until the onion turns translucent and fragrant.
  • Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  • Sprinkle in the chili powder, cumin, and smoked paprika. Stir them into the beef mixture, allowing the spices to toast slightly, about 1-2 minutes.
  • Pour in the diced tomatoes and drained kidney beans. Stir well to combine.

Cooking

  • Lower the heat, cover the pot, and let simmer for 20 minutes. Stir occasionally and taste to adjust seasoning.
  • Once thick and bubbling, scoop the chili into bowls and allow each person to add their favorite toppings.

Notes

Chili tastes even better the next day. Store any leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently on the stove over medium heat, adding a splash of broth if necessary.
