Ingredients
  

Chicken and Marinade

  • 2 pounds boneless, skinless chicken breasts Can substitute with chicken thighs for richer flavor.
  • 1 cup BBQ sauce Choose your favorite brand or homemade for an extra kick.
  • 2 tablespoons olive oil Can be replaced with avocado oil for a different flavor.
  • Salt and pepper To taste.

Vegetables

  • 1 red bell pepper, cut into chunks Feel free to swap with any color bell pepper.
  • 1 yellow onion, cut into chunks
  • 1 zucchini, sliced For a colorful and nutritious addition.

Skewers

  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes to prevent burning.

Preparation

  • Cut the chicken breasts into 1-inch cubes for even cooking.
  • In a large bowl, combine the chicken cubes with BBQ sauce, olive oil, salt, and pepper. Ensure each piece is well-coated and let it marinate for at least 15 minutes.

Assembly

  • Alternate threading pieces of chicken, bell pepper, onion, and zucchini onto the skewers.

Cooking

  • Preheat your grill to medium-high heat.
  • Place the skewers on the grill, cooking for about 15 minutes, rotating every 5 minutes until the chicken is cooked through (internal temperature of 165°F).

Serving

  • Remove the skewers from the grill and let them rest for a couple of minutes to allow juices to redistribute.

Notes

To enhance nutrition, consider using tofu for a plant-based alternative or homemade BBQ sauce with reduced sugar. Serve over quinoa or brown rice, or pair with tzatziki for dipping.
