  • 2 cups cooked chicken (shredded; rotisserie chicken works great!)
  • 1 cup BBQ sauce (your favorite brand)
  • 1 large pizza dough (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup red onion (thinly sliced) for a bit of zing
  • 1/2 cup corn (fresh, frozen, or canned) adds sweetness
  • 1/4 cup cilantro (fresh, chopped) for garnish
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the shredded chicken and BBQ sauce. Make sure your chicken is well-coated.
  • Roll out the pizza dough in a greased 9×13-inch baking dish, pressing it up the sides slightly.
  • Sprinkle half of the shredded mozzarella on the pizza dough, then layer the BBQ chicken mixture evenly on top. Add the remaining cheese, corn, and red onions.

Cooking

  • Pop the casserole in the oven and bake for 25–30 minutes, or until the cheese is melted and golden.
  • Once out of the oven, let it cool for a few minutes. Sprinkle fresh cilantro on top for a vibrant finish. Now, slice it up and enjoy.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, microwave individual portions or place the entire dish back in the oven at 350°F (175°C).
