  • 2 cups cooked chicken, shredded rotisserie chicken works great!
  • 1 cup BBQ sauce your choice (hickory smoked or honey BBQ are popular)
  • 1 can (8 oz) refrigerated biscuit dough for a fluffy crust
  • 1 cup shredded mozzarella cheese for that creamy stretch
  • 1/2 cup red onion, thinly sliced for a zing
  • 1/2 cup corn kernels fresh, frozen, or canned
  • 1/4 cup cilantro, chopped for garnish

Preparation

  • Preheat your oven to 375°F (190°C) to ensure that your pizza cooks evenly.
  • In a large mixing bowl, combine the shredded chicken and BBQ sauce. Make sure every piece is well coated.
  • Open the can of biscuit dough and cut each biscuit into quarters.
  • In a large bowl, add the biscuit pieces to the BBQ chicken mixture and gently stir until the biscuits are coated.
  • Add half of the mozzarella cheese, sliced red onion, and corn kernels to the bowl. Mix everything gently until combined.
  • Pour the mixture into a greased 9x13 inch baking dish and top with the remaining mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes or until golden brown and bubbly.
  • Once baked, remove from the oven, let it cool for a few minutes, and garnish with fresh cilantro before serving.

Notes

Serve your BBQ Chicken Bubble Up Pizza with a side of mixed greens topped with a light vinaigrette to balance the richness. It can be made in advance and frozen before baking.
