  • 1/2 cup Mayonnaise Adds creaminess to the sauce.
  • 2 tbsp Sriracha Adjust according to heat preference.
  • 1 tbsp Honey Balances the spice with sweetness.
  • 1 tbsp Rice vinegar Provides a tangy finish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) to ensure crispy bites.
  • Cut the salmon fillets into bite-sized cubes, about 1-inch pieces, and place them in a mixing bowl.
  • In a separate bowl, mix the panko breadcrumbs and cornstarch for the coating.
  • Whisk the egg in another bowl. Dip each salmon piece into the egg, then coat with the breadcrumb mixture, pressing gently to ensure it sticks.

Cooking

  • Place the coated salmon bites on a parchment-lined baking sheet and bake for 10 minutes, flipping halfway through until golden brown.
  • While baking, prepare the Bang Bang sauce by mixing mayonnaise, Sriracha, honey, and rice vinegar in a bowl.
  • Once the salmon bites are cooked, toss them in the Bang Bang sauce or serve it on the side for dipping.

Notes

Keep leftover bites in an airtight container for up to 3 days. Reheat in the oven for best results. The sauce can be made ahead and stored in the fridge for up to a week.
