Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken thighs (or chicken breasts for a leaner option)
  • 1 cup buttermilk (substitute with plant-based milk mixed with lemon juice for a dairy-free version)
  • 1 cup all-purpose flour (use almond flour for a gluten-free alternative)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying (avocado oil works well)

For the Bang Bang Sauce

  • 1/2 cup mayonnaise (Greek yogurt can be used for a healthier option)
  • 3 tablespoons sweet chili sauce
  • 1 teaspoon sriracha (adjust based on your spice tolerance)
  • 1 teaspoon lime juice
  • Optional: chopped green onions for garnish

For Serving

  • Slider buns (mini brioche are delightful or use whole-grain for a healthier twist)
  • Shredded lettuce
  • Sliced tomatoes

Preparation

  • Begin by marinating the chicken. Combine buttermilk with the chicken in a bowl, ensuring every piece is coated. Let it sit for at least 30 minutes to tenderize and infuse flavor.
  • In a separate bowl, mix together flour, paprika, garlic powder, salt, and pepper. This seasoned flour will give your chicken that crispy exterior everyone loves.
  • Heat about an inch of oil in a heavy skillet over medium heat. The oil should be hot but not smoking. Use a thermometer to ensure it reaches 350°F for optimal frying.
  • Remove each piece of chicken from the buttermilk, allowing excess to drip off, and dredge it in the seasoned flour. Fry the chicken in batches, making sure not to overcrowd the pan. Cook for 4-5 minutes on each side until golden brown.
  • While the chicken is frying, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl. Adjust the spice level to your preference.
  • Place a fried chicken piece on the bottom half of each slider bun. Top it with Bang Bang sauce, lettuce, and tomato. Finish with the top bun and serve immediately.

Notes

Leftover Bang Bang Chicken Sliders can be stored in an airtight container in the fridge for up to 3 days. For meal prep, cooked chicken can be frozen in portions for up to 3 months. Just reheat before serving!
