  • 1/4 cup Cornstarch For crispy coating.
  • to taste Vegetable Oil Choose an oil with a high smoke point, like canola or peanut oil.
  • 1/2 cup Bang Bang Sauce Made from mayonnaise, sweet chili sauce, and sriracha.
  • 1 cup Your Choice of Rice White, brown, or cauliflower rice.
  • to taste Veggies (like bell peppers, cucumbers, and scallions) Mix and match based on what's in season.
  • to taste Sesame Seeds Optional, for garnish.

Preparation

  • Cut chicken breasts into bite-sized pieces.
  • Toss the chicken pieces with cornstarch until well-coated.
  • Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

Cooking

  • Fry the chicken pieces in the hot oil until golden brown and cooked through, about 5-7 minutes.
  • Mix the Bang Bang sauce ingredients in a bowl by whisking together mayonnaise, sweet chili sauce, and a dash of sriracha.
  • Drain the fried chicken on paper towels.
  • In a bowl, layer the rice, then add the crispy chicken, and drizzle the Bang Bang sauce on top.
  • Garnish with fresh veggies and a sprinkle of sesame seeds.

Serving

  • Serve warm and enjoy the blend of flavors.

Notes

For added spice, adjust the sriracha to your heat preference. This recipe is versatile; feel free to use shrimp, tempeh, or jackfruit as protein substitutes.
