Preparation

  • Preheat your oven to 425°F (220°C) so it’s ready for those crispy slices.
  • Wash and slice the potatoes into thin rounds, about 1/4 inch thick. A mandoline slicer works wonders if you have one.
  • In a large bowl, combine the potato slices with olive oil, salt, and pepper. Toss until evenly coated.
  • Arrange the potato slices in a single layer on a baking sheet lined with parchment paper, ensuring they don’t overlap for even cooking.

Cooking

  • Place the baking sheet in the oven and bake for about 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
  • Remove the baking sheet from the oven, sprinkle shredded cheese over the hot potato slices, and return to the oven for an additional 5 minutes, or until the cheese is bubbly and melted.
  • Once out of the oven, sprinkle fresh herbs, if using, for a vibrant finish. Dig in while they’re warm!

Notes

For a healthier option, consider using less cheese and more herbs. These slices make a fantastic snack for game day gatherings.
