Chicken and Coating

  • 4 pieces Boneless, skinless chicken breasts You can use chicken thighs for a lighter option.
  • 1 cup Freshly grated Parmesan cheese Pre-grated will work in a pinch.
  • 1 cup Panko breadcrumbs Regular breadcrumbs can be used for a milder texture.
  • 1 teaspoon Garlic powder Fresh minced garlic can add bolder flavor.
  • 1 tablespoon Dried herbs (Italian seasoning) Mix of dried basil, oregano, and parsley also works.
  • 1/2 teaspoon Salt Be generous but taste as you go.
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil Can also use melted butter for extra richness.

Preparation

  • Preheat your oven to 400°F (200°C) and grease a baking sheet with a drizzle of olive oil.
  • In a bowl, combine the Parmesan cheese, panko breadcrumbs, garlic powder, dried herbs, salt, and pepper.
  • Pat the chicken breasts dry and season lightly with salt and pepper.

Coating and Baking

  • Dip each chicken breast in the breadcrumb mixture, making sure to evenly coat both sides.
  • Place the coated chicken on the prepared baking sheet and drizzle with a bit of olive oil.
  • Bake for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  • Let the chicken rest for a few minutes before serving.

Serving

  • Slice and serve with your favorite sides.

Notes

Add crushed red pepper flakes to the breadcrumb mixture for some heat. Top with fresh parsley or basil for added flavor before serving. Serve with cranberry sauce for a festive twist.
