  • 4 pieces Eggs Fresh eggs are recommended.
  • 250 g Cherry tomatoes Sweet and juicy.
  • 200 g Fresh spinach Can substitute with kale or Swiss chard.
  • 2 tbsp Olive oil For drizzling over ingredients.
  • 2 cloves Garlic Minced for depth of flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, pour a drizzle of olive oil to coat the bottom.
  • Halve the cherry tomatoes and spread them evenly in the dish, followed by the fresh spinach.
  • Crumble the feta cheese over the vegetables.
  • Create small wells in the cheese and fill each with an egg.
  • Sprinkle the minced garlic along with salt and pepper to taste.
  • Bake in the preheated oven for about 20 minutes, or until the egg whites are set but the yolks remain slightly runny.
  • Once out of the oven, sprinkle fresh herbs on top and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or microwave. You can prep vegetables and cheese ahead of time.
