Baked Burrata and Tomato Pasta

  • 12 ounces Pasta (spaghetti or penne)
  • 2 pints Cherry Tomatoes Bursting with flavor.
  • 8 ounces Burrata Cheese For that indulgent touch.
  • 3 cloves Garlic, minced To add depth.
  • 3 tablespoons Olive Oil For richness and flavor.
  • to taste Salt and Pepper
  • Fresh Basil Leaves For a hint of freshness (or use dried if that’s what you have).
  • Red Pepper Flakes Optional, for a little heat.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine the cherry tomatoes, minced garlic, olive oil, salt, and pepper. Roast them in the oven for about 15 minutes until they burst and become caramelized.
  • While the tomatoes roast, cook your pasta according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  • Once the tomatoes are out, lower the oven temperature to 375°F (190°C). Add the cooked pasta to the baking dish and mix well. If the mixture seems dry, add a little reserved pasta water to loosen it up.
  • Tear the burrata into large pieces and nestle it in the pasta and tomatoes. Pop the dish back into the oven for about 5–7 minutes, just until the cheese is warm and slightly melted.
  • After baking, remove from the oven and garnish with fresh basil leaves and red pepper flakes, if using.

Notes

Consider whole grain or legume-based pasta for added fiber and protein. Drizzle with balsamic glaze before serving for an extra layer of flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
