Ingredients

Main Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes Use thigh meat for richer flavor.
  • 12 slices thin-cut bacon, halved Turkey bacon works as a leaner substitution.

Seasonings

  • 1 teaspoon smoked paprika Adds depth and a subtle smokiness.
  • 0.5 teaspoon garlic powder For cozy, savory notes.
  • 0.5 teaspoon onion powder Rounds out the flavor.
  • 0.5 teaspoon salt Adjust to taste.
  • 0.25 teaspoon black pepper Adjust to taste.

Glaze

  • 2 tablespoons maple syrup or honey Use sugar-free syrup for lower sugar.
  • 1 tablespoon Dijon mustard Optional, for a tangy pop.

Other Ingredients

  • 1 tablespoon olive oil Helps the seasoning stick.
  • 1 bunch fresh parsley, chopped, for garnish Optional but cheerful.
  • Toothpicks for securing the bites.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup. If using an air fryer, preheat to 400°F.
  • In a large bowl, toss the chicken cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
  • Take a half-slice of bacon and wrap it around a seasoned chicken cube, securing it with a toothpick. Place each wrapped bite on the prepared baking sheet seam-side down.

Cooking

  • Whisk together maple syrup (or honey) and Dijon mustard. Brush or drizzle half over the bites.
  • Bake for 20–25 minutes, turning once and brushing with the remaining glaze halfway through, until the bacon is crisp and the chicken reaches 165°F (74°C). For air fryer, cook for 10–12 minutes, turning once.
  • Let the bites rest for 3–5 minutes before serving.

Serving

  • Garnish with chopped parsley and serve warm.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. To reheat, bake at 350°F for 8–10 minutes or air fry at 350°F for 4–6 minutes. Assemble the bites and store in the fridge for up to 24 hours before baking.
