  • 4 large bell peppers (red, yellow, or green) Choose based on your preference for sweetness.
  • 1 lb ground beef (or ground turkey for a lighter option)
  • 4 strips bacon (chopped) Feel free to swap with turkey bacon for a healthier twist.
  • 1 cup shredded cheddar cheese Or a combination of your favorite cheeses.
  • 1/2 cup diced onions Adding sautéed onions elevates flavor.
  • 1/2 cup diced tomatoes Fresh or canned; both work well.
  • 1 tablespoon Worcestershire sauce For that essential umami flavor.
  • Salt and pepper To taste.

Garnish

  • Fresh parsley For garnish (optional, but adds color and freshness).

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.

Cooking

  • In a large skillet over medium heat, cook the chopped bacon until crispy.
  • Add the ground beef and break it apart with a spatula, cooking until browned.
  • Add the diced onions to the skillet and cook for about 5 minutes, until translucent.
  • Stir in the diced tomatoes, Worcestershire sauce, salt, and pepper. Cook for another 2-3 minutes.
  • Stir in half of the cheese, allowing it to melt into your mixture.

Stuffing and Baking

  • Spoon the beef mixture into the hollowed peppers and place them upright in a baking dish.
  • Top each stuffed pepper with the remaining cheese and cover the dish with aluminum foil.
  • Bake for 25 minutes, then remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly.

Serving

  • Remove from the oven, garnish with fresh parsley if desired, and let them rest for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For meal prepping, assemble the stuffed peppers ahead of time.
