Ingredients
  

Potato Mixture

  • 4-5 medium Yukon Gold potatoes Any waxy variety works well.
  • 1 medium onion Finely chopped.
  • 3 cloves garlic Minced.
  • 2 cups shredded sharp cheddar cheese Substitute with mozzarella for a milder flavor.
  • 1.5 cups heavy cream Can be replaced with half-and-half for a lighter option.
  • 1 cup sour cream Greek yogurt can be used as a healthier alternative.
  • 4 tablespoons butter Melted.
  • Salt and pepper To taste.
  • 1 teaspoon paprika For added warmth.

Preparation

  • Wash and peel the potatoes, then slice them thinly (about 1/8 inch thick).
  • In a bowl, mix the heavy cream, sour cream, melted butter, salt, pepper, and paprika. Stir in the minced garlic and half of the shredded cheese.

Cooking

  • In the crockpot, layer a handful of potato slices, followed by some chopped onion. Pour part of the creamy mixture over them. Repeat the layering until all ingredients are used, ending with the creamy mixture on top.
  • Cover the crockpot and cook on low for 4-5 hours or high for 2-3 hours.
  • When the potatoes are fork-tender, sprinkle the remaining cheese on top and cover for about 15 minutes until melted and bubbly.
  • Serve and enjoy the delicious aroma!

Notes

For a herbed delight, add thyme or rosemary. Incorporate spinach, broccoli, or diced bell peppers for added nutrition. You can also mix in ham or bacon for a protein kick, or add a bit of cayenne or jalapeƱos for heat.
