Ingredients
  

For the cake layer

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the apple pie filling

  • 3 large tart apples (such as Granny Smith), peeled and sliced
  • 0.75 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg
  • 1 tablespoon cornstarch (for thickening)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
  • In another bowl, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  • Add in the eggs, vanilla extract, and buttermilk, mixing until just combined.
  • Tip: Don’t overmix; this could result in a dense cake.

Filling and Layering

  • In a separate bowl, mix the sliced apples with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch.
  • Gently fold half of this mixture into the cake batter.
  • Pour half of the batter into a greased 9x13 inch baking dish.
  • Evenly spread the remaining apple mixture on top, followed by the rest of the batter.

Baking

  • Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Allow the cake to cool for 20-30 minutes before serving.

Notes

Serve warm or at room temperature, optionally add a scoop of vanilla ice cream or a sprinkle of powdered sugar. Pair with caramel sauce or whipped cream.
