Apple Filling

Preparation

  • Peel, core, and chop 2 cups of apples into small pieces. Combine the chopped apples with the brown sugar and cinnamon in a bowl and let sit for about 10 minutes to enhance flavor.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • Cut cold butter into cubes and incorporate it into the dry mixture until it resembles coarse crumbs.
  • Pour in the buttermilk and stir gently until just combined.
  • Fold the apple mixture into the biscuit dough, ensuring an even distribution.
  • On a floured surface, turn out the dough and knead gently a few times. Pat into a 1-inch thick rectangle and cut out biscuits.

Baking

  • Arrange the biscuits on a baking sheet lined with parchment paper and bake at 425°F (220°C) for about 25 minutes or until golden brown.
  • For the optional drizzle, mix powdered sugar with milk and vanilla, then drizzle over the cooled biscuits.

Notes

Handle the dough gently to avoid tough biscuits. Ensure cold butter is used for fluffiness, and measure ingredients accurately.
