Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the ground beef in a skillet over medium heat until fully browned, breaking it apart as it cooks.
  • Stir in the frozen mixed vegetables and cook for an additional 5 minutes.
  • Add in the cream of mushroom soup and mix until well combined.
  • Fold in the cooked rice and half of the shredded cheese, mixing everything together.
  • Transfer the mixture to a lightly greased casserole dish, smoothing it out evenly.
  • Top with the remaining cheese.
  • Bake for 30 minutes, or until the cheese is golden and bubbly.

Notes

Feel free to add spices, top with crispy fried onions, or make it healthier by using a homemade version of the soup. Experiment with different vegetables!
