Vanilla Almond Baked Oatmeal

This basic baked oatmeal recipe is delicious on its own, or you can change it however you like. Add fruit or chocolate, whatever your heart desires.

You guys. I love baked oatmeal. It’s so easy and super filling. This particular recipe is really cool because you can adjust it however you like. You can add nuts, dried fruit, spices, chocolate, anything!

Also, since it contains flour, it’s a little more bread-like and less sticky than other baked oatmeals. I haven’t tried using almond flour, but I think I’ll have to give it a go. I bet it has a really nice texture.

We have started buying gluten free oats. I’m trying to work out if I’m sensitive to gluten, so we’ve been trying to buy gluten free when we can.

Almond Milk

Make sure you use the unsweetened original. The brand doesn’t matter. Any sweetener or flavoring will throw off the taste of this recipe.

Almond Butter

I do use sweetened almond butter. Maranatha is my favorite brand. It doesn’t have a ton of sugar, but it does have such a good flavor.

Vanilla Almond Baked Oatmeal

This baked oatmeal recipe is a really cool one. It's delicious all by itself but it's super basic so you can add anything you like. Dried fruit, nuts, spices or chocolate chips would work great.

  • 1 ½ cups old fashioned oats
  • ½ cup all purpose flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cup almond milk
  • 1 tbsp vanilla extract
  • 2 eggs
  • ¼ cup almond butter - softened


  • Preheat oven to 350° F.
  • Grease 9x9 baking dish with butter or cooking spray.
  • In a large mixing bowl, combine oats, flour, sugar, baking powder and salt. Set aside.
  • In a separate bowl, whisk together almond milk, vanilla extract, eggs and almond butter.
  • Pour wet ingredients into dry ingredients and mix well.
  • Pour mixture into prepared baking dish and use a spoon or rubber spatula to make dure oats are distributed evenly throughout the dish.
  • Bake for 25-30 minutes until toothpick inserted in the center comes out clean and edges are just slightly starting to brown.
  • Serve warm and top with anything you like such as nuts or melted almond butter.
