Chocolate Peanut Butter Baked Oatmeal

We make baked oatmeal pretty often in our house. Sometimes we aim for healthy, protein packed versions and other times, we just want something a little bit indulgent. This is somewhere in the middle.

It’s long after the kids have gone to bed. I’ve been getting some much needed housework done and there’s just one thing left to do before bed. Make breakfast. I LOVE a make-ahead breakfast. This Chocolate Peanut Butter Baked Oatmeal is a super simple spin off of my last post, the Vanilla Almond Baked Oatmeal. Make this the night before and enjoy a much smoother morning.

We try to have a healthy breakfast most days, but occasionally we splurge on something a little sinful. As a general rule, I don’t like giving my kids much sugar, especially with breakfast because it just creates wacky behavior issues with young toddlers. Now and again, we have a special day or maybe mama just wants chocolate for breakfast. Can you blame me?

I use gluten free oats. I still haven’t worked out if I have a gluten intolerance or not, but why not eliminate it in the easiest ways? 


I rarely use plain ole processed white sugar in my recipes because I like to make things as healthy as possible. This one is an exception but you can use whatever sweetener you prefer. 

Peanut Butter

I like to get my peanut butter at Costco and it happens to be one that’s made without sugar. If you use a peanut butter that’s sweetened, you might want to cut down a bit on the sugar in the recipe. 

It helps to warm the peanut butter just a little bit before you try to mix it in. It’s not necessary but helps it dissolve into the mixture a bit faster.

Making the Baked Oatmeal

One of the things I love about baked oatmeal is you don’t have to do anything special. Mix the dry ingredients together. Mix the wet ingredients together. Combine the two and add the extras like nuts or dried fruit, depending on your recipe. That’s it! Then you just pour it into a pan and bake it according the recipe instructions.

Chocolate Peanut Butter Baked Oatmeal

I love a make-ahead breakfast. This chocolate peanut butter baked oatmeal is rich but not too sweet. With chocolate chips and fresh raspberries on top, it tastes sinful but it isn't!

  • 1 ½ cups old fashioned oats
  • ½ cup all purpose flour
  • cup sugar
  • ¼ cup cocoa powder
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups almond milk - or other milk of your choice
  • 1 tbsp vanilla extract
  • 2 eggs
  • cup peanut butter


  • Preheat oven to 350° F and spray a 9x9
  • In a large mixing bowl, combine oats, flour, sugar, cocoa powder, baking powder and salt. Set aside.
  • In a separate bowl, whisk together almond milk, vanilla extract, eggs and peanut butter.
  • Add wet ingredients to dry ingredients and mix well.
  • Pour mixture into prepared baking dish and bake for 30-35 minutes until toothpick inserted in center comes out clean.
  • Serve warm or let it cool completely, then cover and store in the refrigerator.
